Fresh milk collected each morning from farms we know and trust.
The milk is set into curd using natural culture and left to develop slowly overnight.
The curd is churned by hand with a wooden bilona in small batches — the step that gives the method its name, and can't be rushed by a machine.
The fresh white butter — makhan — rises to the top and is skimmed off by hand.
The makhan is cooked on a low flame until the milk solids settle and the ghee turns golden and fragrant.
Cooled, strained, and jarred as-is — no preservatives, no added colour, no shortcuts.

Most ghee is made by heating cream or butter directly. Bilona ghee is made by first setting milk into curd, hand-churning that curd into butter, and only then simmering it slowly — a slower, more traditional process that gives a richer aroma and flavour.
Keep the jar tightly closed in a cool, dry place away from direct sunlight and moisture — no refrigeration needed. Always use a clean, dry spoon so no water gets into the jar, since moisture is what causes ghee to spoil faster.
